1kg potatoes, peeled and thinly sliced
200ml BIRRA MORETTI
2 tbsp olive oil
200g smoked pancetta cubes
Salt and black pepper
2 x large red onions, thinly sliced
85g grated pecorino cheese
Preheat the oven to 180°C (fan oven). Place the potatoes in a large bowl and toss together with BIRRA MORETTI, olive oil, salt and black pepper. Add the pancetta to a frying pan and cook for 4-5 minutes, until golden.
Lift the potatoes out of the BIRRA MORETTI mixture and line the bottom of a lightly oiled ovenproof dish with a layer of potatoes followed by a layer of sliced onions, then scatter a few pancetta cubes and some grated pecorino on top. Continue making layers like these until you have used up all the ingredients, ending with grated pecorino.
Pour over the BIRRA MORETTI mixture, cover with foil and bake in the oven for 30 minutes. Remove the foil and continue to bake for another 20 minutes or so until the potatoes are cooked through and the topping is golden-brown.
Remove from the oven and leave to rest for a couple of minutes before serving lightly drizzled with a little BIRRA MORETTI.
